gtphub: cosmetic: clarify bind pointer naming.

Some gtphub_bind pointers point to an array of binds, some point directly at
instances. Make the distinction between the two more obvious by adding an
'_arr' suffix to the array ones.

Partly in preparation for upcoming rate counters.
